Questions

Do I need a 4-bay NAS?

For RAID 5 or SHR with room to grow, yes. A 2-bay unit only mirrors, so usable space is half the raw capacity.

Is 1GbE enough?

For streaming and backups, yes. For editing files directly from the NAS, 2.5GbE or 10GbE is noticeably faster.
